Not the best apple and pear crumble, but a good start

I love crumble, and for a couple of weeks I have been in search of the best crumble recipe in the world so that I can create lovely fruity crumbles for Domesticated Mum and my kids. So imagine my excitement when the October issue of my favourite food magazine, Delicious, had a recipe claiming to be The Best Crumble Recipe in the World… Could my crumble quest be over before it has really even started? I immediately gathered the ingredients and set about constructing the recipe to find out, and although the results were nice, I am still not convinced it was the best crumble in the world, but I think it is a good starting point for anyone interested in making their own crumble.

APPLE AND PEAR CRUMBLE

  • Serves 6-8 |
  • Preparation time: 30 minutes
  • Cooking time: 45 minutes

Ingredients

For the filling

  • 3 bramley apples, finely chopped
  • 2  good quality pears, cored and chopped
  • Juice of 1 lemon
  • 100g demerara sugar
  • ½ tsp ground ginger
  • 200g marzipan

For the Crumble topping

  • 200g chilled butter, diced
  • 250g plain flour
  • 50g demerara sugar
  • 75g skin-on almonds, chopped
  • 1 tsp ground cinnamon
  • Grated zest of 2 lemons

Method

1. Preheat the oven to 200°C/fan180°C/gas 6. Peel, core and dice all the fruit and place in a 1.6 litre ovenproof dish. Squeeze over the lemon juice, then carefully stir in the sugar and spices.

2. For the crumble, in a large bowl, rub the butter into the flour (see video below for more information) to make a coarse crumbly mixture. Stir in the sugar, almonds, cinnamon and lemon zest. Chop up the marzipan and dot it evenly over the fruit in the dish, then sprinkle over the crumble mixture.

3. Put the dish on a baking sheet and bake for 45 minutes until the topping is golden and the fruit is tender and juicy. Set aside for 5 minutes, then spoon into bowls and serve with cream or custard.
